Ginger brings together the combined talents of 2 incredibly creative individuals – Matt is our Chef Director and his passion for food is phenomenal – when he is not cooking, he is researching and experimenting, making his dishes even more of a culinary delight! Sally, is our Events Director, and her creativity and expertise in running weddings and events is second to none. Her ability to make everything look incredibly beautiful (particularly our canape displays), along with the organisational skills to seamlessly run a function, means that together, with over 40 years of combined experience, they are the dream team!

We created Ginger Catering in 2016 and since that point Ginger has gone from strength to strength. The business continues to cement itself as a formidable and trusted supplier in the wedding industry. We take great pleasure in sharing our love for all things ‘catering’ with the world!

How as being involved in the TWIA affected your business?

Ginger were over the moon to be announced as Regional Finalists (South Central) in the Catering category of the TWIA after such a short time in the wedding industry – which is testament to the hard work and dedication of the entire Ginger team. It is such a prestigious award, that really stands out to couples looking for their dream wedding suppliers. We are so grateful for the opportunities that have come as a result of our TWIA journey.

What is a typical day working in the wedding industry like?

There is no denying that working as a caterer within the Wedding Industry is very hard work – the hours are long and often unsociable, but the pleasure derived from seeing a room full of wedding guests having the best day – laughing, eating and drinking, is just the best! Knowing that you have formed part of a memory bank that people will talk about for many years to come, is a really special feeling. Ginger Catering take a unique approach to the wedding industry, the food forms part of the entertainment, it sparks conversation, it makes people very happy, and we are very proud of our little business.


So What Wedding Trends Are Set To Be Hot In 2018?

JenandDavidsWedding519Here at Ginger, we love listening to our next season bride and grooms and truly understanding their food aspirations for their big day. Many of our couples remain traditionalists, opting for the classical 3 course plated wedding breakfast, of course with our Ginger twist – incorporating our creative canape displays and vibrant, fresh flavours. However, occasionally you come across a couple who want a different approach to their first meal as ‘Man and Wife’ – to step outside the realms of what you would expect, to really put their own stamp on their day! We love it when an enquiry email starts with ‘We are real foodies so the food is really important to us’ – here at Ginger, we can relate to that statement wholeheartedly!

At Ginger, we take pride in creating all of our food from the freshest, raw ingredients, sourced locally where possible. This means, that we can create bespoke menus, bringing originality to every plate!

During 2018, we are incorporating a number of menus where the flowers are not just reserved for the bouquets – fresh, floral flavours are popping up in desserts, with hints of Elderflower and Orange Blossom (best recognised in our ‘Edible Garden’) and a delicate hint of rose in our soft, gooey meringue kisses.

Spring Dessert StationBotanicals don’t just stop at the food – infused gins continue to be incredibly popular and offer a refreshing and attractive alternative for reception drinks – Rosemary and Sage work really well for this. Why not offer a selection of infusions and flavourings for your very own evening Gin bar? Ice cubes can be pimped with berries and herbs to add even further layers of interest to quench your thirst on a warm, summers evening.

Feasting or Sharing platters create a fun, sociable and buzzy dining experience and can, in one mouthful, magically transport you around the world – from sunny Spanish climes and the rich and varied flavours of traditional Tapas to the relaxed, Italian Riveria, with succulent Antipasti offerings incorporating sun drenched Olives and freshly baked Ciabatta. Or for something a bit more British, how about a 6-hour slow roasted shoulder of lamb, marinated in garlic and rosemary, so incredibly soft and tender that it just melts in your mouth, served with a selection of sides and colourful, vibrant salads? No wonder this is so popular!

Dessert Stations, are surely, pudding heaven! Sweet and rich mini pots of a variety of desserts allow you to cover all bases when it comes to the taste buds of your wedding guests. Some prefer to finish a meal with a decadent millionaire shortbread style layered dessert with caramel and popping candy, for others a tangy and sharp lemon posset, with blueberry compote and a white chocolate and lavender crumble, offers just the right amount of sweetness to finish off the wedding breakfast. The beauty of a dessert station is that you can offer both, and even throw a third into the mix! We display our dessert stations amongst props and botanicals that can be tailored to your theme, adding an element of theatre to the day, and offering yet another reason why choosing Ginger for your wedding catering will be incredibly memorable!

We have set up several visually enticing displays this year, tailored to the theme of our couples wedding days. At Ginger, we know how difficult it is to make decisions so why choose one when you can choose three? His, hers and a mutual favourite- nothing wrong with that.

14370013_1097611880276545_2499474046706189407_nOne of our guest’s selections this year for an event we catered for at the lovely Titchfield vineyard home to some delightful Hampshire wines including, Red, Whites & Rose consisted of a trio of Lemon Posset with Lavender crumble, Tiramisu Trifle and a Strawberry cheesecake mousse. We incorporated the service of the desserts into the evening’s entertainment of a Rat Pack tribute act. During the ‘interval’, the dessert station provided the next form of entertainment and a welcome change to the traditional ice cream pot, where guests could help themselves to the beautiful array of selected desserts displayed in a glamorous, razzle, dazzle dessert case and white pillowy linen, surrounded by up lights, fairy lights and matching floral displays. There was not one more left than the other and we felt their choices catered for a variety of pallets keeping the guests going back for more.

Dessert stations are not strictly exclusive to Weddings, we are creative caterers providing delicious food for any event in Hampshire and surrounding counties. Over the year since we launched Ginger Catering in April we have also set up dessert stations for Birthdays and corporate events across hampshire and within the New Forest. We know this is a trend that will be strong in 2017 because who wants to just have one cake and eat it? Be creative, have fun with your food and let the visuals compliment your day. At Ginger, we pride ourselves on mouth-watering displays which have the “too good to eat” look, but the “dive in” encouragement.

fullsizerenderOur stunningly edible little pieces of heaven feature the ‘Edible Summer Garden’ and a Chocolate Mess with Salted Caramel and Popping Candy, these two in particular really do have the wow factor when it comes to presentation, complemented by a flavour explosion. I can’t count the number of times our guests have complimented us on these two favourites, they truly are magical. We also loved creating a woodland display for these little gems to be displayed on recently, rustic and delicate, it just shows their wonderful ability to adapt to any style or occasion.

I personally think that the ongoing trend for food stations is fantastic, more than one choice and food that forms as part of the entertainment ticks all the boxes. Weddings are becoming more and more creative and the catering should just as exciting. Corporate Event Hampshire – Hampshire Chamber of Commerce Annual Boat Show Lunch

captureToday I had the pleasure of attending the Annual Boat Show lunch at the Southampton Grand Harbour hotel, hosted by the Hampshire Chamber of Commerce.  This hugely popular event saw 130 passionate business men and women come together for a networking opportunity, followed by entry to the famous Boat Show – a chance to marvel at the most magnificent vessels of the sea, at the largest outdoor boat show in Europe.

The event started with a reception drink of bubbly fizz, whilst we all had the opportunity to forge new business relationships and beneficial connections with the other attendees. Once seated, we were treated to a delicious meal and I was lucky enough to be sat with some fabulous people from varied industries and sectors – conversations flowed and so did the laughs!

After lunch it was time for the keynote speakers to take centre stage, and this year it was Chris Gregory and Jake Sheaf – TeamGB Beach Volleyball Professional Athletes. You literally couldn’t miss these guys – 7ft and 6ft 5in respectively! It was a difficult job watching these 2 toned, muscular and athletic men talking about their route to sporting success – but someone had to do it 😉

capture1Both Chris and Jake explained how they had experienced various hurdles, injuries and personal issues to reach the pinnacles of their careers, and that they had their sights firmly set on achieving gold in the 2018 Commonwealth games – a goal that I have no doubt will be achieved purely on their immense dedication to their game.

They closed their talk with a powerful statement that they said inspired them every day – ‘Don’t be good…….be great’ – And I would say that this pretty much sums up our ethos here at Ginger!
