We can’t believe that January is over, 2017 is fully underway and so are the plans for this year’s spring ‘Wedding Showcase’. We don’t want to give too much away but we have decided on a theme which we absolutely love and the location couldn’t be more fitting for this theme. We met up with Kirsty from Planning by Laurel and Dawn from Minstead Trust this week to nail down on some details. There are so many decisions to make whilst planning a wedding, whether you’re getting married this year, the next or you just can’t help but make a secret pinterest board (don’t worry we won’t tell anyone!). This is why we want to go ahead and plan another showcase, with extensive knowledge and a long history within the industry we bring together some of the best suppliers in the business who we trust and adore.

As you know we have paired up with the newest addition to New Forest wedding venues – Minstead Lodge, choosing to have Minstead as your venue gives you a versatile scape and a blank canvas for creation. Minstead are blessed with the beauty of their surroundings and throughout the year the seasons add stunning features to their grounds.  It also couldn’t get better in terms of wedding logistics for travel and accommodation. Its just off the M27, nestled nicely within the New Forest and local town Lyndhurst which is only a stones throw away, is full of many places to put up your guests for the evening.

Last time we went very glam with our theme so this time we want to get back down to earth, here’s a couple of hints to get your imagination going… Greenery, naked wood and golden light. A simple but elegant feel with natural elements entwined; perfect for the wedding showcase this spring. We don’t need to look far for the companies who bring all of this together, we’ve been blessed by being able to work with so many great people on our journey so far.

Comfort Food Ideas For Your Wedding Menu: A Simple Rye Bread For Toasting

slidersYou may think we are clutching at ‘straws’ or we ‘dough’ not have enough material to write another wedding blog but I promise you we have some inspiration that could be just ‘rye’ for you…

You might not have thought about having bread as a part of your wedding feast however we have plenty of food for thought here at Ginger and this one should be considered. We’ve mentioned in our recent blog about the ‘up-rising’ popularity of sharing platters – food that brings your guests together and has that rustic but luxurious theme, and bread certainly fits in nicely with this. Bread is far from boring when you’re pairing it with freshly prepared Anti-Pasti, char-grilled Mediterranean vegetables, or mopping up fragrant, balsamic olive oil with warmed, soft focaccia…….

Picture this….Pumpernickel, Ciabatta and seeded Baguette sliced and served with a selection of New Forest cheeses on an Autumnal late afternoon, post wedding breakfast, illuminated by the warmth of candle lanterns. Making you hungry? It certainly gets our stomachs rumbling, especially that smell of freshly baked goods coming straight from the oven. Sharing Platters For Wedding Banquets

Let’s break traditional and get intimate. Don’t get me wrong, I do love the elegance of a three course plated meal but there is something quite fun about having an abundance of food delivered to the centre of the table, for guests to dive into. We are not talking about a medieval style self-serve buffet or an even older style banquet of ripping into a carcass, but instead a beautifully plated selection of succulent meats, with a balance of carbs and vibrant salads. But Veggies and Vegan’s, don’t feel that this option is solely for the meat eater, oh no, our vegetarian wedding options are just as substantial and stunningly presented.

We have set up several visually enticing displays this year, tailored to the theme of our couples wedding days. At Ginger, we know how difficult it is to make decisions so why choose one when you can choose three? His, hers and a mutual favourite- nothing wrong with that.

14370013_1097611880276545_2499474046706189407_nOne of our guest’s selections this year for an event we catered for at the lovely Titchfield vineyard home to some delightful Hampshire wines including, Red, Whites & Rose consisted of a trio of Lemon Posset with Lavender crumble, Tiramisu Trifle and a Strawberry cheesecake mousse. We incorporated the service of the desserts into the evening’s entertainment of a Rat Pack tribute act. During the ‘interval’, the dessert station provided the next form of entertainment and a welcome change to the traditional ice cream pot, where guests could help themselves to the beautiful array of selected desserts displayed in a glamorous, razzle, dazzle dessert case and white pillowy linen, surrounded by up lights, fairy lights and matching floral displays. There was not one more left than the other and we felt their choices catered for a variety of pallets keeping the guests going back for more.

Dessert stations are not strictly exclusive to Weddings, we are creative caterers providing delicious food for any event in Hampshire and surrounding counties. Over the year since we launched Ginger Catering in April we have also set up dessert stations for Birthdays and corporate events across hampshire and within the New Forest. We know this is a trend that will be strong in 2017 because who wants to just have one cake and eat it? Be creative, have fun with your food and let the visuals compliment your day. fullsizerenderOur stunningly edible little pieces of heaven feature the ‘Edible Summer Garden’ and a Chocolate Mess with Salted Caramel and Popping Candy, these two in particular really do have the wow factor when it comes to presentation, complemented by a flavour explosion. I can’t count the number of times our guests have complimented us on these two favourites, they truly are magical. We also loved creating a woodland display for these little gems to be displayed on recently, rustic and delicate, it just shows their wonderful ability to adapt to any style or occasion.

I personally think that the ongoing trend for food stations is fantastic, more than one choice and food that forms as part of the entertainment ticks all the boxes. Weddings are becoming more and more creative and the catering should just as exciting. Minstead Lodge Wedding Venue New Forest National Park


Early in the Spring as the buds were just starting to come into blossom we met with the lovely Dawn and Liz at Minstead Lodge to discuss the potential opportunity of working together and making use of the lovely grounds of the Lodge to help generate funds for the Trust. Now that the leaves have changed to vibrant yellows and deep reds we can reflect on successfully holding their first Wedding Showcase back at the beginning of October.  We are now looking forward to the Spring Wedding Showcase on the 2nd April and the first wedding at the venue in Summer ’17.

It’s so lovely for us to be able to offer the grounds of the lodge to brides and grooms for their special day but the reasons for this opportunity is due to a decrease in government funding. By choosing Minstead Lodge as your wedding venue you will not only receive an exceptional level of service, you will also be generating funds to help keep Minstead Trust operating and helping so many people who, without the help and support wouldn’t have the chance to live independently.

Minstead Trust is a social enterprise that supports people with learning disabilities and autism, who want to develop and maintain their skills for life, skills for work, better health and wellbeing.

They also offer support for the individuals who want to move away from home for the first time, by supported them in their own home or in a house with other people.

Today we were invited to attend the open AGM of the trust to hear about all of the new ways in which the trust is expanding. 3 months ago they launched two new venues in Portsmouth to help adults in the local area become more independent. These venues have come a long way in such a short space of time and have received glowing audits from the Portsmouth council.

The aim of the social enterprises at the main base of Minstead Lodge is to enable the students to have jobs within the maintenance and upkeep of the beautiful Furzey Gardens, the wood work team with their production of items to be sold at craft fayres as well as their new online shop and also within the lodge itself by providing hospitality services for conferencing day delegates and for the future, even catering for their own wedding receptions.

We need to raise awareness for those who live more challenging lives and rely on the support from the local community and volunteers to be independent, who take pride in the challenges they face and overcome when doing something most of us would find a mundane daily chore. We must give thanks for what we have and give back where we can.

Brand New Marquee Wedding Venue New Forest – Wedding Caterers New Forest, Hampshire

Minstead Lodge is set in the New Forest National Park, with the marquee for your wedding celebrations nestled amongst the trees in the enclosure, accessed via a short tree lined walk from the main car park and lodge. The marquee provides a blank canvas, which can be transformed and personalised to any theme or décor – the possibilities are endless!

The beautiful grounds to the side and the rear of the lodge provide a variety of locations for intimate wedding photography. Heading back up to the marquee, couples can make use of the arched trees encasing a secret staircase, as well as the tree lined drive leading from the main entrance to the marquee site.

Corporate Event Hampshire – Hampshire Chamber of Commerce Annual Boat Show Lunch

captureToday I had the pleasure of attending the Annual Boat Show lunch at the Southampton Grand Harbour hotel, hosted by the Hampshire Chamber of Commerce.  This hugely popular event saw 130 passionate business men and women come together for a networking opportunity, followed by entry to the famous Boat Show – a chance to marvel at the most magnificent vessels of the sea, at the largest outdoor boat show in Europe.

The event started with a reception drink of bubbly fizz, whilst we all had the opportunity to forge new business relationships and beneficial connections with the other attendees. Once seated, we were treated to a delicious meal and I was lucky enough to be sat with some fabulous people from varied industries and sectors – conversations flowed and so did the laughs!

After lunch it was time for the keynote speakers to take centre stage, and this year it was Chris Gregory and Jake Sheaf – TeamGB Beach Volleyball Professional Athletes. You literally couldn’t miss these guys – 7ft and 6ft 5in respectively! It was a difficult job watching these 2 toned, muscular and athletic men talking about their route to sporting success – but someone had to do it 😉

capture1Both Chris and Jake explained how they had experienced various hurdles, injuries and personal issues to reach the pinnacles of their careers, and that they had their sights firmly set on achieving gold in the 2018 Commonwealth games – a goal that I have no doubt will be achieved purely on their immense dedication to their game.

They closed their talk with a powerful statement that they said inspired them every day – ‘Don’t be good…….be great’ – And I would say that this pretty much sums up our ethos here at Ginger!

Wedding Breakfast and Catering Trend Predictions 2017–New Forest, Hampshire Wedding Catering Company…Ginger.

metallics-picAs we approach the Autumn, now is a good time to start thinking about what will be the ‘hot’ trends of 2017, as these trends may influence the choices our couples make when deciding on their wedding catering. Here at Ginger, we love creating food that inspires and ignites the imagination, and taking a couple’s ideas and transforming them into delicious, culinary reality. We think that Julie Gray of Bovingdon’s has pretty much got the predictions spot on in her article below. We are seeing that wedding styling is becoming a key feature of the day for our wedding clients. Couples are choosing a ‘style’ and this is being reflected across all aspects of their day. Canapés, bars and evening food stations are great ways of incorporating your look.
Where fashion starts weddings follow – straight from the catwalk we are seeing metallic hit weddings in a big way, allowing couples to have fun playing with their styling through glassware, gold mirrored table tops, gold cutlery and tablecloths. Silver and bronze dusted chocolate truffles are a key part of this.
No, we are not talking about the tacky sequins of the past. Sequins are returning in beautiful shades of rose, gold and champagne, some with bold, geometric shapes in tablecloths and more – a truly elegant way to complement any look. Sequins and food, however, don’t mix!
Out with the old and in with the new
No more pub food! Casual dining is OUT and fine dining is IN. This does not need to be all foams and pearls, but a more refined plate that still sustains your guests.
We are seeing a resurgence of old and delicious classics like Beef Wellington, or vegetable lasagne for your non-meat eating guests. Game is also becoming more popular, and I think in winter 2016/17 we will be serving much more venison, rabbit, pheasant and wild boar.
British all the way
It is fabulous that people are championing local food and produce as they become more aware of food miles, and this is reflected in menus offering delicious variety throughout the seasons. Asparagus in May/June, Strawberries in July/August –you just can’t beat local, seasonal fruit and vegetables.
More and more we are seeing cocktails playing a large part in weddings, and we do not expect this to dissipate, but we are also seeing the cocktails cross over to the food. Who wouldn’t want to end the meal with a mojito cheesecake, cherry martini torte, margarita tart or gin and tonic sorbet? It is a great way to signal that the party is about to begin.
Let them eat cake?
wedding-cocktailsThe importance of the wedding cake seems to be waning, with couples spending less and less budget on this part of the wedding, and more importance placed on the evening food and keeping guests happy right to the end. A larger number of savoury cakes are being requested that can then double up later in the evening as food to keep the guests dancing into the wee hours. A fabulous British artisan cheese table is hard to beat; a still life of heavenly tastes that expresses the maker’s passion, combined with local chutney, British apples and pears, and amazing wheat and oat wafers.
Bubbles and more
With the British viniculture being so good at the moment couples are looking closer to home for their fizz. With some stunning award-winners coming from Nye timber and Chapel Down competing against the Champagne region, why would you look further afield?
Out with the new and in with the old!
More and more couples are asking for old world wines to complement their menus, with a resurgence in the sales of French and Italian wines. C’est magnifique! Si! I think this goes hand in hand with the return to fine dining.
Stylish soft drinks just as important as the fizz
A delicious alternative to alcohol is hugely important. It not only keeps people hydrated it also tells your non-drinking friends that you really care about them. Couples get more adventurous in their choices, such as thyme lemonade, strawberry basil-ade, peach melba and grapefruit cooler, and ginger and basil spritzer.
